We make brown and white spelt sourdough which consist only of water, flour and salt. Recently we have added to that list a beer sourdough which uses Costello's Red Ale, a local craft beer instead of water. Beer and sourdough have the same fermentation process and complement each other very well. Well worth a try!!!
Breads have a fermentation time of over 12 hours and have a nice strong flavour.
The Irish Buttermilk Soda is made with wholemeal spelt flour, baking soda, salt, brown cane sugar, olive oil and buttermilk. For added health benefits and bite, we add pumpkin seed, sunflower seed and sesame seed. Due to the use of Baking Soda, this bread is the only bread that does not fall into the guidelines of Real Bread Ireland. However, we like to make the most traditional of Irish breads and are sure you'll enjoy it
Our yeast loaves come in many different shapes and sizes that vary from time to time. All are real bread in that they contain only flour, yeast, salt and a small quantity of sugar. For further taste and texture, we have added seeds to some and sun dried tomatoes and olives to others. All take a minimum of 4 hours to make and have plenty of time to rise and develop their flavours and texture. We bake soft loaves ideal for sandwiches, free rise crusty baquettes and also enriched breads with brioche dough which contains milk, butter and eggs for lovely moist, soft bread.
